Spicy, Creamy Chicken With Asparagus

How to Make Spicy, Creamy Chicken with Asparagus

Ingredients

  • 2 medium chicken breasts (boneless, skinless and cut into bite sized pieces)
  • 1 tablespoon of each: garlic powder and salt
  • 1 tsp of each: salt, garlic powder, Italian seasoning and onion powder
  • 1/2 teaspoon pepper
  • 1 tablespoon olive oil
  • 3 tablespoons butter
  • 1 pound asparagus
  • 1/3 cup yellow onion (optional)
  • 1 cup heavy cream
  • 2 tablespoons Sriracha (optional to do more or leave out)
  • 1/4 cup Parmesan cheese

Optional:

  • Cook asparagus in a sheet pan for 15 minutes separately from chicken
  • Cook asparagus in skillet after the chicken has cooked

Instructions

Step 1: Preheat oven to 400 degrees. On a sheet pan, lay out cleaned + cut asparagus and sprinkle 1 tablespoon of olive oil over the stalks. Sprinkle onion powder, garlic powder and salt over the asparagus and then toss on the pan. Pop in the oven for 15 minutes.

Step 2: Cut up your chicken into cubes and place in a bowl. Stir in spices including salt, onion powder, garlic powder, and pepper.

Step 3: Using a large skillet, melt 2 tablespoons of butter and 1 teaspoon of olive oil over medium heat.

Step 4: Cook the chicken cubes in the butter until all sides are cooked. Half-way through cooking add a teaspoon of Italian seasoning and yellow onions. Remove the chicken from the pan and set aside.

Step 5: In the skillet lower the heat and use a 1/4 cup of either white wine or chicken broth to deglaze the pan. Add a tablespoon of butter, 1 cup of heavy cream, 2 tablespoons of Sriracha and a 1/4 cup of Parmesan cheese to the skillet. Stir until fully combined. Add more Sriracha for more heat.

Step 6: By this point your asparagus will be ready to take out of the oven, so go ahead and do that. Add the chicken back to the skillet and stir into the sauce.
